Citizens of a Mexico City borough set a record this weekend by cooking up the largest enchilada in history. Residents of Iztapalapa used corn tortillas, white onions, chili peppers, green tomatoes, avocado, cheese and salsa in creating a 230-foot-long enchilada that weighed nearly 3,000 pounds.
This monstrous Mexican meal was presented at the borough’s eighth annual Enchilada Fair. Guinness World Records officials verified the record.
